1️⃣ Prepare the base of the dough

In a large bowl, combine the flour and salt.
Add the lard, cut into small pieces.

Work the mixture with your fingertips until it resembles coarse sand. The fat must be well incorporated into the flour: this step guarantees light and crispy doughnuts.

2️⃣ Activate the yeast

In another bowl:

  • Pour in the lukewarm water (not hot, so as not to kill the yeast).

  • Add the hot milk

  • Incorporate the crumbled fresh yeast.

Mix until completely dissolved.
